A small cheese case, chosen for the ones that are hard to find rather than the ones everybody stocks.

Krinos halloumi carries PDO status, which ties it to Cyprus and to a specific method. It squeaks against the teeth and, unusually, grills and fries without melting — which makes it the easiest cheese here to cook with, and the one to buy if you have never cooked cheese before. Zergüt Bulgarian kashkaval is firm sheep's milk, made for grating over things and for grilling. Gäsene Mejeri hushållsost is the mild Swedish household cheese eaten on crispbread at breakfast, and comes in a 400 g piece or a near-kilo block.

Valio Viola from Finland is the soft spreadable one in the round tub, and the one Finnish customers come in specifically for.
