A pale yellow wheel of Bulgarian kashkaval in a red and white wrap-around label with a mountain motif. Kashkaval is the semi-hard, pasta-filata style cheese of the Balkans — firm, slightly springy, salty and nutty. It slices, grates and melts well, and it is the everyday cheese of Bulgarian cooking: on bread, in banitsa, grilled, or fried as kashkaval pane.

100% sheep's milk, stated on the front and confirmed by the ingredient list. Most kashkaval sold outside the Balkans is cow's milk or a blend; sheep's milk gives it a richer, more savoury character and is what the original is made from.

Four ingredients. And the nutrition is genuinely strong: 7 g of protein and 225 mg of calcium in a single 28 g ounce — that is 25 g protein and around 800 mg calcium per 100 g, among the highest of any cheese we carry.
