Fish here means the preserved kind — tinned, smoked, salted and spread — which is how most of Europe eats it away from the coast.

Cod liver in its own oil is the heart of it, from Riga Lux, Royal Zenith and Threeline in 115 g, 120 g and 240 g tins, processed and packed in Iceland. Naturally rich in omega-3 and vitamin D, eaten straight on dark rye or the traditional way with boiled egg and onion. Latvian smoked sprats sit beside them.

The spreads are the part worth discovering. Krinos taramosalata is the Greek cured roe spread, pale pink, lemony and salty, which belongs beside warm bread and is better than it sounds to anyone who has not tried it. Kalles is the Swedish version in a tube — creamed smoked roe, eaten on crispbread at breakfast, and an acquired taste that Swedes are entirely unapologetic about.

Add ABBA matjes herring, Grebbestads ansjovis, Ortiz anchovies from Spain and Callipo tuna in olive oil from Calabria, and the shelf covers most of the continent's coastline.
