Herring fillets cured in the Swedish ansjovis spice blend — allspice, cinnamon, cloves and sandalwood — which is sweet and aromatic rather than fishy, and nothing to do with Mediterranean anchovies. This is the sill that goes into Jansson's temptation, and onto the julbord.

From Klädesholmen in Bohuslän, the island that has been salting herring since the seventeenth century. Graded extra prima.
