Butter first, because European butter is genuinely a different product. It is churned to a higher fat content than the American standard, which is why pastry made with it behaves differently and why people notice immediately.

Isigny Ste-Mère beurre d'Isigny carries AOP protection: it can only be made from the milk of one corner of Normandy. Pale gold, faintly hazelnut, and the butter French pastry recipes quietly assume. Meggle from Germany and Finlandia from Finland cover the unsalted everyday, and Les Prés Salés is studded with coarse sea salt.

The cheese is Mediterranean and Balkan. Krinos halloumi carries PDO status, squeaks against the teeth and grills without melting, which makes it the easiest cheese in the shop to cook with. Zergüt Bulgarian kashkaval is a firm sheep's milk cheese for grating and grilling. Gäsene Mejeri hushållsost is the mild Swedish household cheese eaten on crispbread at breakfast. Valio Viola from Finland is the soft spreadable one in the round tub.
