Imam bayildi means "the imam fainted", which is what the story says happened when he tasted it. Whole aubergines are split and stuffed with onion, tomato and garlic, then cooked slowly in a good deal of oil until everything collapses together. Serve at room temperature, which is how it is meant to be eaten, with bread to get the oil off the plate.
