Ajvar is the Balkan autumn in a jar. Red peppers are roasted until the skins blister, then peeled, minced and cooked down slowly with aubergine and oil until the whole thing thickens into a spoonable relish. The mild jar leaves the chilli out, so what comes through is the sweetness that roasting pulls out of the peppers. Spread it on bread with white cheese, put it beside grilled meat, or eat it off the spoon standing at the fridge, which is what most people do.
