Lokum — Turkish delight — is a soft, yielding sweet made by cooking sugar and starch slowly until it sets to a gel, then dusting it so the pieces do not stick. Uğurlu have been making it since 1978.
The texture is the point. Good lokum is tender rather than rubbery, and it gives cleanly when bitten instead of pulling. It is cut into cubes and eaten in small pieces, traditionally alongside strong coffee or black tea, where the bitterness of the cup balances the sweetness of the sweet.
A 350 g box holds enough to put out for guests over several visits. Keep it cool and dry, and keep the box flat rather than on its side so the pieces hold their shape.
