Angel Food Cake — 6 eggs · 1½ cup sifted sugar · 1½ tsp grated lemon rind · 3 tbsp lemon juice · 1¼ cups Swan potato starch flour · ¼ cup boiling water. Bake at 300°F for 30 min, then 350°F for 40 min in an ungreased 10-inch tube pan; invert to cool.
Medium White Sauce (for gravies, creamed and scalloped dishes) — 2 tbsp butter or fat · 2 tbsp Swan potato starch flour · ¼ tsp salt · 1 cup milk, cream or stock.
