Schlünder Rum Stollen, 26.4 oz (750g)

A full Christmas stollen with rum-soaked fruit, dusted heavily in icing sugar.

Stollen is a yeasted, butter-heavy bread rather than a cake, and it is meant to be made weeks ahead — the butter and sugar preserve it, and the flavour settles and deepens as it rests. A fresh stollen is not as good as one that has sat.

Cut it in thin slices across the loaf, not in wedges. Keep it wrapped and cool and it will see you through December.
