Swedish gingersnaps are rolled much thinner than the English or American kind and baked until they break cleanly rather than bend. That thinness is what makes them a Christmas biscuit you can eat ten of.

The tin matters: these go soft in a bag within days, and keep for months sealed. Serve with glögg, or with blue cheese, which is a genuinely Swedish habit.
