Fine wheat semolina — manka — the porridge a great many Russian and Ukrainian children grew up on.

Cooked slowly in milk it goes smooth and loose rather than stiff, and takes butter, jam or honey. It is also the binder in syrniki and in a baked mannik cake, where it gives a texture no flour will reproduce. A bag this size lasts a long time; keep it dry and sealed.
