A jaffa cake done the Milka way. A soft sponge round, a layer of chocolate-flavoured mousse set on top of it, and the whole thing covered in Milka's Alpine milk chocolate.

Most jaffa cakes use an orange jelly. This one replaces it with a chocolate mousse, so instead of sharp-and-sweet you get soft-and-rich all the way through. The mousse is set with pectin, which is why it holds its shape at room temperature and still gives when you bite it.
