Maison Pébeyre Truffle Honey

Honey infused with black truffle, from Maison Pébeyre, a French truffle house in the Lot, the country's traditional truffle region.

Truffle honey is a savoury-leaning condiment rather than a sweet one. The truffle turns the honey earthy and faintly mushroomy, and the sweetness becomes a background note that carries the aroma rather than the point of it.

Its natural home is a cheese board. A spoonful over blue cheese, aged pecorino, a firm sheep's cheese or a warm round of baked camembert. It is also used over foie gras, on charcuterie, and — sparingly — over roast vegetables or a pizza bianca.

A little goes a long way. This is a drizzle, not a spread.
