Pistachio cream in a classic panettone — the Sicilian flavour that has quietly taken over Italian Christmas baking in the last few years.

Pistachio is the one people argue about and then finish. It is sweeter and rounder than the plain panettone, and the colour through a cut slice is part of the pleasure of putting it on the table.

Serving it: wedges from the top, at room temperature. Good with coffee, better with a glass of something cold and sweet.
