Les Mouettes d'Arvor Mackerel Fillets in Muscadet White Wine, 6.21 oz (176g)

Mackerel fillets from Concarneau in Brittany, marinated in Muscadet with lemon, onion, carrot and a little chilli.

These are prepared by hand — préparés à la main on the tin — and the fish is 66% of the contents, which is high for a marinated tin and is what you taste. The Muscadet keeps the marinade dry and sharp rather than sweet, so it cuts the oiliness of the mackerel instead of adding to it.

Serve cold on bread with butter, or lift the fillets onto warm potatoes and let the marinade dress them. Open the tin an hour before if you can.
