Aachener gingerbread from a house that has been baking it for over 330 years. Lambertz began in Aachen in 1688, and Printen-style Lebkuchen is what the city is known for.

Contrella is the glazed version: soft spiced gingerbread under a chocolate coating, with a sugar glaze beneath it. The fruit in the dough — figs, apricot purée, orange peel, apple extract — is what keeps it moist and gives it the depth that separates German Lebkuchen from a plain ginger biscuit.

Serving it: at room temperature with coffee. Keep the pack sealed; Lebkuchen dries out faster than it looks like it should.
