San Marzano DOP whole peeled tomatoes from La Valle. DOP means the real thing, grown in the volcanic soil around Vesuvius and certified — not simply a tomato shaped like one. Long, low in seed, sweet, and not very acidic.

The tomato for a sauce you are not going to hide behind anything. Crush them by hand in the pan.
