Paglia e fieno ā "straw and hay". Plain egg pasta and spinach egg pasta in the same nest, so the dish arrives yellow and green. Camerino make it the traditional Marche way, with egg.
Cream, peas and ham is the classic; it is just as good with butter and parmesan.
