IKA’S Garden Raw Pine Honey (500g)

Raw pine honey — dark, thick and only mildly sweet, with a resinous, faintly malty depth that sets it apart from any flower honey.

Pine honey is a honeydew honey. The bees do not gather it from blossom at all; they collect the sweet secretions left on pine trees, which is why it tastes of forest rather than flowers and why it is so much darker in the jar. Most of the world's supply comes from the pine forests of the eastern Mediterranean, where it is a everyday staple rather than a curiosity.

Being raw, it is not heat-treated, so it keeps the character and the natural crystallisation that pasteurised honey loses. If it sets firm in the jar, that is the honey behaving normally — stand the jar in warm water to loosen it.

Lower in sweetness than blossom honey, it suits people who find ordinary honey cloying. Good on thick yoghurt, on dark bread, with walnuts, or stirred into tea.
