Rich, white and buttery — the smoked fish people mean when they say butterfish. Very high in oil, so a little goes further than it looks.
What fish is it, and one thing to know
The ingredient line reads escolar, which is what is sold as butterfish. Escolar is oily in an unusual way: much of its fat is a wax ester the body cannot digest, and eating a large portion can cause stomach upset and diarrhoea in some people. The usual advice is to keep to a serving of about 6 oz or less and to avoid it if you have a sensitive stomach. Several countries restrict its sale for this reason.
This is not a warning printed on the pack — it is a property of the fish, and we would rather you knew it before buying than afterwards.
