Baked to European rules. Potassium bromate and azodicarbonamide, both used to treat flour in American baking, are not permitted in the European Union. Six food colours that are still common in American biscuits and iced cakes must carry a warning on the label here, so European bakers stopped using them. Titanium dioxide, used to make icing and coatings an opaque white, has been banned as a food colour in the EU since 2022. It is the same reason the ingredient list on the back of the pack is short.

Amarettini — the small, hard, bitter-almond biscuits of Lombardy, made the traditional way with apricot kernels rather than almonds, which is where the bitterness comes from. Crisp enough to snap, and they keep for weeks in the bag.

Eaten with coffee, crushed over ice cream, or folded into a tiramisu.
