A tall black squeeze bottle with a yellow label. Grafschafter Goldsaft is Rheinischer Zuckerrübensirup — Rhenish sugar beet syrup — a thick, dark, glossy spread somewhere between treacle and molasses, but rounder and less bitter than either.
It has one ingredient: sugar beet. Nothing added, nothing taken out. The label's claim is simply the pure juice of harvest-fresh beets, boiled down.
The seal on the bottle is an EU Protected Geographical Indication. Like Champagne or Parma ham, "Rheinischer Zuckerrübensirup" is a legally defined product that can only be made in its own region by its own method. It is not a marketing word.
In Germany it goes on dark bread and butter, and it is the traditional partner to Reibekuchen, the Rhineland potato pancake. It also works on müsli, yoghurt and waffles, and in gingerbread and red cabbage, where it does the job American cooks use molasses for.
