The coating on this salami is real parmesan cheese, so unlike the other cured sausages on these pages this one contains dairy. The coating is also held on with gelatin. Neither is obvious from across a deli counter, so it is worth saying plainly.
Eating it
Slice it thin. The parmesan edge means it needs very little beside it — bread, a few olives, something to drink. It is already doing the job that cheese usually does on a board, so put it next to a plain salami rather than a strong one.

Keeping it
