A bake-stable vanilla pastry cream — backfest means it holds its shape in the oven, and lange schnittfest means a tart cut hours later still has clean slices. Whisk with cold milk; ready in a minute, no cooking.

This is the filling for a fruit flan under a layer of glaze. It is a different product from the TortenCreme Käse-Sahne and from the Original Pudding — neither of those is bake-stable.
