Made to European food rules. In the EU every additive has to be authorised before it can go into food, and there is no route for a manufacturer to approve its own — in the United States there is. Potassium bromate is prohibited in flour here and azodicarbonamide is not authorised at all; both are still permitted in American baking. That is usually why the ingredient list on the back is shorter.

Casarecce are short lengths of pasta rolled and twisted along their spine, so each piece has a groove down the middle that holds sauce. Organic durum wheat, bronze-die cut, which leaves the surface rough enough for sauce to grip.
