Mustard seed salami — whole yellow mustard seeds worked through a dry-aged pork salami, so every slice is flecked with them and carries a mild, nutty heat. Cold-smoked over hardwood and aged slowly, like the rest of the Black Kassel range.

Eating it
It wants rye bread and a sharp pickle, and it is the one salami on the board that does not need mustard beside it. Thin slices; the seeds pop between the teeth.
Allergens — read this if mustard matters to you
Piller's print "free of all major food allergens" and list milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans and sesame. Mustard is not on that American list, but this salami is made with mustard seed — and mustard is a declarable allergen in Canada and Europe. Ingredients
Pork, salt, dehydrated pork stock, mustard seeds, dextrose, glucono delta lactone, corn syrup solids, spices and spice extracts, sugar, sodium ascorbate, lactic acid starter culture, sodium nitrate, sodium nitrite, natural smoke.
Keeping it
The label says keep refrigerated, and the fridge is where it belongs once you get it home — but it is a dry-aged salami in a sealed casing and it travels perfectly well. Once cut, wrap the face and refrigerate.
