Whole chilli peppers pickled in the Armenian style — sharp, sour and genuinely hot, with the skins left on so they keep their bite rather than going soft in the jar.

These are a table pickle, not a cooking ingredient. Put them out whole alongside grilled meat, plov or a plate of cheese and bread, and let people take one at a time. The brine is worth keeping; a spoonful lifts a bean soup or a dressing.
