Zefir is not marshmallow, whatever the packet says in English. It is made from apple purée whipped with egg white and set with pectin — lighter, less sweet, and with a faint fruit sharpness that an American marshmallow does not have. It is eaten with tea, not toasted.

Petersburgskiy Konditer sell it plain in assorted flavours by the 310 g box. Udarnitsa and Vdohnovenie coat theirs in dark chocolate, which is the version most people mean when they say they miss it.
