Fresh potato gnocchi from Mamma Emma, made with real steamed potato rather than dehydrated flake ā which is why they stay light instead of turning to putty. They cook in about a minute, floating to the surface when they are done.
Butter and sage, a plain tomato sauce, or gorgonzola. Do not overcook them; lift them out as soon as they rise.
