AOP protected origin, a certification few butters carry. Two ingredients: pasteurized cow's milk and lactic starters. Cultured, unsalted, and at 82% fat with correspondingly less water, it is the butter for laminated pastry — croissants, puff, brioche — where every extra percent of fat and every gram less water shows in the finished layers. Also the right choice for anyone controlling salt in baking.
