Isigny Ste-Mère beurre d'Isigny carries AOP protection: it can only be made from the milk of one corner of Normandy, and it is pale gold, faintly hazelnut, and what French pastry recipes quietly assume you are using. Les Prés Salés is studded with coarse sea salt and belongs on radishes and good bread. Meggle from Germany and Finlandia from Finland cover the unsalted everyday baking butter.
