Made to European food rules. In the EU every additive has to be authorised before it can go into food, and there is no route for a manufacturer to approve its own — in the United States there is. Potassium bromate is prohibited in flour here and azodicarbonamide is not authorised at all; both are still permitted in American baking. That is usually why the ingredient list on the back is shorter.

Spätzle made without egg, which is unusual — the egg is normally what gives them their colour and bite. These cook the same way and finish well in butter or oil.
