Asiago D.O.P. in its young form — fresco, aged only a short while, so it is pale, springy and mild rather than hard and sharp. Milk, salt and rennet, nothing else. Made by Monti Trentini, cheesemakers since 1925, under Consorzio authorisation no. 41/95.

Open it 15 minutes early
The pack asks you to open it at least a quarter of an hour before you eat it. A young cheese straight out of a vacuum pack tastes of the pack; give it some air and it comes back. Worth doing.

Eating it
Young Asiago is a table cheese, not a grating one — in cubes with a glass of something white, in a sandwich, or melted into polenta. If you want it for grating you want the aged d'allevo, not this.

Keeping it
Packed in a protective atmosphere — do not puncture the pack. Keep refrigerated between 35°F and 41°F, and once opened eat it within three days.
