Using them

A couple melted into warm oil with garlic is the base of half of southern Italian cooking — puttanesca, broccoli rabe, bagna càuda. They dissolve completely and what you taste afterwards is savour, not fish.

Cool and dark while sealed. Once opened, keep in the fridge with the fillets under the oil.
