Sicilian pesto — the red one. Tomato two ways, semi-dried and dried, with capers, cashews and grated cheese, and Genovese P.D.O. basil running underneath it. Rounder and sweeter than a green pesto, and salty from the capers.

The egg arrives as egg lysozyme, a preservative in the grated cheese, rather than as an ingredient you can see in the list.

Using it

Through hot pasta off the heat, loosened with a little cooking water. Also good on bruschetta, or spooned over grilled fish or chicken. Do not cook it hard.

Sunflower seed oil, tomato sauce, cashew, grated cheese (milk, salt, rennet, egg lysozyme [preservative]), semi dried tomatoes, capers, "Genovese P.D.O. basil", dried tomato, salt, vegetable fiber, ascorbic acid [antioxidant]. Gluten free.

Keeping it

Keep refrigerated. Once opened, use within two days. That is a short window even for a fresh pesto — buy it for the meal you are cooking, not for the cupboard.
