Potato, not pasta. These are made from potato bound with just enough flour to hold them — soft rather than firm, and quite different from anything made with durum wheat. Made to European food rules, where every additive has to be authorised before it can be used; in the United States a manufacturer can decide for itself that one is safe.

Shelf-stable potato gnocchi at eighty per cent potato, which is high and shows in the texture: softer and less doughy than the cheaper sort. Two to three minutes in boiling water and they float. Dress them simply — butter and sage, or a plain tomato sauce.
