Danish blue in the traditional style: sharp, salty and heavily veined, with a crumble rather than a cut.

It is a strong cheese and does not pretend otherwise — more aggressive than a Gorgonzola and far saltier than a Stilton. Crumble it over a salad, melt it into a sauce for steak, or put it on dark rye with something sweet beside it.
