Baked to European rules. Potassium bromate and azodicarbonamide, both used to treat flour in American baking, are not permitted in the European Union. Six food colours that are still common in American biscuits and iced cakes must carry a warning on the label here, so European bakers stopped using them. Titanium dioxide, used to make icing and coatings an opaque white, has been banned as a food colour in the EU since 2022. It is the same reason the ingredient list on the back of the pack is short.

A premium Romanian holiday classic built for high-impact bakery presentation. Boromir Cozonac delivers a soft, slow-raised dough (“maia” starter) with rich fillings designed for elevated impulse sales and gifting baskets. No preservatives. Each loaf offers ~400–500g of traditional European craftsmanship (exact gram weight not printed on front but typically in this range).

Ingredients

Wheat flour, sugar, raisins 8%, natural yeast, vegetable oils (palm, sunflower, rapeseed), egg yolk, butter, invert sugar syrup, emulsifiers (mono- and diglycerides of fatty acids, soya lecithin), milk powder, low-fat cocoa powder, ethyl alcohol, yeast, iodised salt, natural flavouring. Walnut and raisin cream 35%: wheat flour, water, egg white, walnuts 5%, vegetable oils.

Cozonac is the Romanian celebration bread — a sweet enriched loaf, here rolled with a walnut and raisin cream that makes up 35% of the loaf. Traditionally baked for Easter and Christmas. Ethyl alcohol is listed as an ingredient, used to keep the loaf fresh; worth knowing for anyone who avoids alcohol.

Baked the European way

The EU bans potassium bromate and azodicarbonamide — two dough conditioners the United States still permits in flour. European bread is also typically long-fermented rather than rushed, and that slower process breaks down fructans: the FODMAPs behind a good deal of the bloating people blame on gluten.

This is not gluten-free bread — it is made with wheat and/or rye flour. But many of our customers tell us it sits easier than supermarket bread, and this is why.
