Belli Amaretti alle Mandorle Crunchy Almond Biscuits, 8.8 oz (250g)

Crunchy amaretti — the hard kind, not the soft Sardinian kind. Almond macaroons that snap, go slightly chewy in the middle, and are meant to be dunked in coffee or in a glass of sweet wine.

Six ingredients, and no flour at all. Sugar, almonds, egg white, a little milk powder, flavouring and a raising agent — that is the entire recipe. It is why amaretti taste of almond and nothing else, and why they keep for months in a tin.

There is no wheat in the recipe, though the box warns of traces — see below.
