This is real egg pasta. Spätzle are the short, irregular egg noodles of southern Germany — scraped rather than cut, so no two are the same shape and they hold sauce everywhere. Boil for a few minutes, then finish them in butter, or bury them in cheese and fried onion for Käsespätzle.
