Zefir St. Petersburg Pink and White, 14.8 oz (420g)

Zefir is not a marshmallow, whatever the shape suggests. It is made from fruit purée whipped with egg white and set with pectin, which gives it a short, almost powdery bite that collapses rather than stretches.

These are the plain pink and white ones, uncoated. Serve them with black tea and nothing else — they are sweet enough that anything alongside fights them.
