Tula Pryanik Gingerbread with Apple and Sea Buckthorn, 4.6 oz (130g)

The same printed Tula gingerbread, filled with apple and sea buckthorn — облепиха, the bright orange berry that grows wild across Siberia and tastes somewhere between apricot and passion fruit, sharp enough to cut the honey.

The pattern is pressed into the dough from a carved board before baking. Made with real honey, which is what keeps the cake soft.

Sea buckthorn is the Russian cold remedy as much as a flavour — very high in vitamin C — and it is the filling people pick when they find the condensed milk too sweet.
