Saffron filaments in a glass jar — the whole stigmas, not powder. One gram is a lot of saffron: it is enough for roughly ten risottos.

Steep a pinch in a little warm stock or water for ten minutes before it goes into the pan, so the colour and flavour come out. Powder is easy to adulterate; filaments you can see.
