Schlünder Marzipan Christmas Stollen, 26.4 oz (750g)

A full-size German Christmas stollen with a seam of marzipan running through it. Schlünder have been baking in Arnsberg since 1474, and this is their classic festive loaf: heavy with raisins, dusted white, and built around a 10% luxury marzipan filling.

Stollen is not a cake and not quite a bread. The dough is rich and dense rather than airy, and it improves for sitting — a stollen bought in late November and left wrapped until Christmas is better than one baked the day before.

Serving it: slice thin, across the loaf. It is sweet enough that a narrow slice is the right amount, and it suits coffee or a black tea rather than anything milky. Keep it wrapped; it dries out quickly once cut.

Ingredients: wheat flour, raisins, sugars (sugar, glucose, fructose), palm fat, water, candied orange peels, almonds, rapeseed oil, wheat starch, yeast, humectant: sorbitol, lemon peels, salt, natural flavour, emulsifiers: mono- and diglycerides of fatty acids, sodium stearoyl-2-lactylate, hydrogenated palm fat.
