Negroni Genoa Salami, 6 oz (170g)

Genoa salami in the Italian tradition, from a house founded in 1907. Pietro Negroni started in Cremona; this is made to that recipe for the American market.

Finely ground pork, cured with garlic and spices and nothing else — the ingredients list is five lines long and every line is recognisable. Gluten free and milk free.

Serving it: slice thin, at room temperature. It is firm enough to cut by hand and wants bread and something sharp beside it rather than a plate of its own.

Ingredients: pork, salt, dextrose, spices, sodium ascorbate, starter culture, garlic, sodium nitrate, sodium nitrite.
