Imbriago is Venetian dialect for "drunk", and that is the method: a wheel of cow's-milk cheese bathed in Merlot while it ages, until the rind takes a deep purple stain and the wine works a little way into the paste. Monti Trentini make it at Grigno, in the Valsugana. Firm, nutty, faintly winey at the edge and plainer towards the middle.

⚠️ The rind is not edible
The pack says so plainly, and it is worth repeating because the purple rind is the best-looking part of this cheese. Cut it away before serving. It has done its job holding the wine against the paste.
Eating it
Cut it in cubes — the pack suggests a one-inch cube as a serving — and put it out with a red wine, or shave it over a risotto at the end. Strong enough to hold its own on a board next to a blue.

Keeping it
