Potassium bromate is prohibited in flour here and azodicarbonamide is not authorised at all; both are still permitted in American baking. That is usually why the ingredient list on the back is shorter.

Caserecce — short lengths rolled into a loose S, which is exactly the shape that traps a chunky sauce. Organic, bronze die cut and dried slowly at low temperature, which is what keeps the bite.
