Potato, not pasta. Gnocchi are made from cooked potato bound with just enough flour to hold them, which is why they are soft rather than firm and cook in a few minutes instead of ten. Made to European food rules, where every additive has to be authorised before it can be used — in the United States a manufacturer can decide for itself that one is safe.

Shelf-stable potato gnocchi, 80% mashed potato, three servings to the pack. Two to three minutes in rapidly boiling water — they float when they are done. Butter and sage, or a plain tomato sauce.
