Potassium bromate is prohibited in flour here and azodicarbonamide is not authorised at all; both are still permitted in American baking. Orzo — the little rice-shaped pasta — drawn through bronze dies, which leaves the surface rough enough for sauce to cling to. Seven minutes. Good in soup, better as a salad with lemon and herbs.
